Bacon and Tomato Courgetti Salad


1 courgette
2 bacon medallions
5 cherry tomatoes, halved
1 tsp DR ZAKS coconut oil
1/2 tsp pepper
1/2 tsp pink salt

Grate or spirulize the courgette, simmer in coconut oil and lemon/lime and put to one side to cool. Meanwhile add bacon medallions to the oven to cook through. Then add salt/pepper to courgette and stir in tomatoes. Finally chop up bacon and sprinkle it on top. Serve.
