Peanut Buckwheat Pancakes!

With my new diet I have to stay clear of flour…wheat and gluten cause stomach cramps. However I LOVE pancakes so I had to find a resolution. I NEED my fix!

I have discovered that using buckwheat or oats rather then wholemeal flour produces the most amazing mixture and pancakes… if you don’t eat all the mixture first!

I have chosen to use buckwheat in this recipe for the added nutrients. Buckwheat is actually a fruit seed. It is a substitute for grains and great for those intolerant – like myself. Amazingly it is full of nutrients, copper, fiber, magnisium and maganese!! It helps lower blood pressure and promotes a healthy digestive track!

Ingredients

Makes 2 servings

1 banana
50g of buckwheat
pinch of baking powder
150-200ml almond milk
1  egg whites
big scoop of protein powder (we use at Naturaul whey company Vanilla)

Method:

Soak the Buckwheat in almond milk over night.

Blend everything together. Ideally a hand blender. Add some coconut oil to a pan, heat until very hot and then add mixture. We use a larger pan and then do 2-3 pancakes at once.

Serve:

1 tsp of peanut butter mixed with total greek yogurt and bananas
